Scotch Eggs

Scotch Eggs This snack is good hot or cold. It's great for picnics!

  • 6 hard boiled eggs
  • 1 lb. spicy sausage meat
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried basil
  • 1/2 C flour, divided
  • 1 C breadcrumbs
  • 1 tsp. salt
  • 2 tsp. pepper
  • 1 tsp. paprika
  • 2 eggs, beaten
  • oil for frying
Makes 6 Eggs

Peel the eggs and set aside. Mix sausage and spices in a small bowl. Divide sausage into 6 equal portions, set aside. Mix breadcrumbs with salt, pepper and paprika, set aside.

Dry each egg with a paper towel, then roll lightly in flour to coat. Take one portion of sausage and using hands, shape a coating around the hard boiled egg, completely enclosing it. Roll in flour again, then dip in beaten egg then roll in breadcrumb mixture. Repeat with remaining eggs.

Barbecued Banana Split

Barbecued Banana Split Kids of all ages love these. They make great leftovers. Stick the barbecued banana, foil and all in the freezer for a delectable frozen indulgence!

3 Ripe bananas 6 Squares of aluminum foil, measuring approximately 8" X 8"

Choose a combination of any or all of the following toppings:

  • 1-1/2 cups chocolate chips
  • 1-1/2 cups M&Ms
  • 1-1/2 cups Reese's Pieces
  • 1-1/2 cups chopped pecans (to make it Southern)
  • 1-1/2 cups peanuts or walnuts
  • 3/4 cup peanut butter
  • 1-1/2 cups coconut
  • 1-1/2 cups mini marshmallows

Lower-fat version:

  • 1-1/2 cups blueberries
  • 1-1/2 cups strawberries
  • 1-1/2 cups papaya

Place half a banana on each piece of aluminum foil. Slice the banana from end to end, so that it looks like a boat. Place 1/4 cup chocolate chips, marshmallows, M & Ms or your choice of toppings on the banana. Wrap the aluminum foil loosely around the banana.

Place on the barbecue for 3-5 minutes, until the candies and marshmallows have melted. Remove from barbecue. Unwrap and enjoy. Use caution when opening the aluminum foil wrapper, as some steam may escape. Top with whipping cream or ice cream.

Conventional Oven: You can also make barbecued banana splits in a conventional oven. Bake at 400° for 4 minutes.

Spider Dogs

Spider Dogs I don't know where my mom came up with these, but I have enjoyed them since I was little. They are great to do before s'mores, then you know that the kids have had something other than sugar before bed. I did these at a Church campout and the kids were just amazed. hot dogs (the kind that come 8 or 10 in a pack)

You'll need a knife and some roasting forks or sticks. Cut the ends of each hot dog into quarters leaving about 1-1/2 to 2 inches in the middle uncut. You want to leave enough uncut to stick the fork in.

Roast the dogs over the fire or hot coals in a grill. The "legs" will curl out as the hot dogs cook. You can also do them in the kitchen at home over a hot stove burner.

Preparation time: 10 minutes

Birds Nest Salad

Birds Nest SaladCreate these cute chow mein noodle nests with just three ingredients, then fill them with mounds of a nicely seasoned egg salad for tasty results.

Ingredients:

NEST:
  • 1 egg
  • 3 cups chow mein noodles
  • 1/4 teaspoon garlic salt
EGG SALAD:
  • 6 hard-cooked eggs, chopped
  • 1/3 cup mayonnaise
  • 1/3 cup finely chopped celery
  • 2 tablespoons finely chopped onion
  • 2 tablespoons minced fresh parsley
  • 1-1/2 teaspoons ground mustard
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon seasoned salt
  • Lettuce leaves, optional

Directions:

In a small bowl, beat egg. Add chow mein noodles and garlic salt; stir to coat. Drop by 1/3 cupfuls onto a greased baking sheet. Using fingers, shape each into a nest; make an indentation in the center of each. Bake at 350° for 11-13 minutes or until set. Cool for 2 minutes; remove to a wire rack to cool completely.

In a bowl, combine the first eight egg salad ingredients; mix well. Just before serving, spoon 1/4 cupful into each nest. Serve on a lettuce-lined plate if desired. Yield: 6 servings.

Crunchy Biscuits

Crunchy BiscuitsFor a quick complement to the effortless main dish bake these Crunchy Biscuits. Convenient refrigerated biscuits get a tasty treatment when topped with crushed corn chips. Easy.

This is a fun twist on instant biscuits.

Ingredients:

  • 1 tube (7-1/2 ounces) refrigerated home-style biscuits, separated into 10 biscuits
  • 1 tablespoon butter or margarine, melted
  • 1/3 cup crushed corn chips

Arrange biscuits in a greased 8-in. round baking pan. Brush with butter. Sprinkle with corn chips and gently press into the dough. Bake at 400 degrees for 14-16 minutes or until golden brown. Yield: 10 biscuits.

Applesauce

Applesauce It's not really a salad, but this is a great apple sauce recipe - H Ashmont

8 to 10 large tart apples, peeled and cut into chunks; 1/2 to 1 cup sugar; 1/2 cup water; 1 teaspoon ground cinnamon

Combine apples, sugar, water and cinnamon in a slow cooker; stir gently. Cover and cook on low for 6-8 hours or until apples are tender. Yield: 5 cups.
